Mark and Meredith Rawlings opened their restaurant when the Empire Theatre redeveloped and re-opened in the late 90s and have witnessed some significant changes in the Toowoomba dining scene in the two decades since.

The restaurant floats out an approachable menu with steak and seafood dishes still the perennial favourites. “We’re still a beef town, there’s no doubt about it,” Mark says. “And luckily we have great seafood suppliers so we do sell a lot of seafood.”

Huge bi-folding glass doors open onto lawns where a farmer’s market is held every Thursday. It’s glorious spot to sit and watch the crowds come and go, stocking up on fresh fruit and vegetables, flowers, herbs, honey and baked goods.

The couple also have an all-day brassierie, Inbound, at the beautiful old railway station, and Artisan pizza restaurant in the old part of Russell Street.
